Picnic in a Jar!

A simple recipe, inspired by Dorie Greenspan, to enjoy the end of summer at your favourite picnic spot!

Salmon in a Jar

Quantity Ingredient
1 lb Salmon filet
1 lb Fingerling potatoes (optional)
2 Onions
2 Carrots
4 cups Olive Oil
3 TBSP White wine vinegar
20 Coriander seed
4 Bay leaves
20 Black peppercorns
8 Thyme sprigs
2 TBSP Kosher salt
1 TBSP Sugar
  1.  Stir the salt and sugar in a bowl
  2. Slice salmon into same-size pieces. Put in salt and sugar mixture. Cover and refrigerate at least 12 hours
  3. In a jar, place sliced potatoes (cooked and cooled), onions and carrots. Add spices and herbs. Cover with vinegar and oil.

*Please note if you prefer doing the recipe without the fingerling potatoes, you don’t need to include the vinegar.
