A simple recipe, inspired by Dorie Greenspan, to enjoy the end of summer at your favourite picnic spot!
Salmon in a Jar
|1 lb||Salmon filet|
|1 lb||Fingerling potatoes (optional)|
|4 cups||Olive Oil|
|3 TBSP||White wine vinegar|
|2 TBSP||Kosher salt|
- Stir the salt and sugar in a bowl
- Slice salmon into same-size pieces. Put in salt and sugar mixture. Cover and refrigerate at least 12 hours
- In a jar, place sliced potatoes (cooked and cooled), onions and carrots. Add spices and herbs. Cover with vinegar and oil.
*Please note if you prefer doing the recipe without the fingerling potatoes, you don’t need to include the vinegar.
